COS - the manager provided a log showing they run heat-sensitive test strips through the dishwasher every time they do dishes to ensure proper sanitation. Provided her with a variance request that she completed and returned today for this process.
4-102.11(B)(1) - --There is frozen chicken stored inside of a plastic "Thank You" grocery bag. The chicken is in direct contact with the plastic of the bag. COS - the chicken was removed from this bag. Let staff know that these bags are unacceptable for direct contact storage bags for food products.
KDA_3_30211A1b - --In the silver cooler in the kitchen there are raw shell eggs on a shelf directly above a drawer holding bags of chocolate chips and beef/chicken base mix. Corrected on Site (COS) - the manager rearranged this.
KDA_3_50113A - --There is frozen chicken sitting out in a tub on the counter to thaw.
KDA_4_20211A2 - --There is a chipped and cracking scoop in the pea container in the deep freezer. COS - the manager through this scoop away and is going to replace it with a new one.

COS - provided the manager with a variance request which she completed and returned today during the inspection. They will get a copy of the owner's manual that has the data plate information available.
KDA_4_204118 - --There is no pressure gauge available on the household dishwasher in use in the kitchen. COS - provided the manager with a variance request that she completed and returned today. She is getting a copy of the owner's manual for the dishwasher that should state what pressure water enters the dishwasher at.
KDA_4_90311B - --There are non-inverted and uncovered mixing bowls being stored on the little table beside the silver cooler in the kitchen.
KDA_7_10211 - --In the kitchen there is an unlabeled tub with a bubble liquid and cups inside. The staff verified that this was soapy water for soaking cups. Corrected on Site (COS) - the tub was labeled soapy water.

Letting staff know that these containers are not recommended for reuse as they are not as durable and may break down faster.
