These eggs are commercially prepared and come in a brine, but are not labeled as stable to be held past 7 days. The kitchen manager said she believes this is the correct date. COS - the eggs were discarded.
KDA_3_50118A3 - --In the walk-in-cooler there is a container of sliced tomatoes that is dated 9/15 - 9/22. Corrected on Site (COS) - explained to kitchen manager that this should be 9/15 - 9/21 as the first day of preparation must be counted in the 7 days. She corrected the date.
KDA_4_90311B - --On a shelf near the stove there is a stack of stainless steel pots that are being stored neither covered nor inverted.

They have a dishwasher and a separate prep sink. The manager said they fill their sanitizer buckets at these sinks and take them to their appropriate places in the kitchen, but that is all the sinks are used for since they moved to the dish washer.
