Observation: two scoops removed from drawer of clean dishes in large kitchen because they were visibly soiled
- Raw animal foods separated from each other during storage, separation, holding, and display
Observation: in large walkin cooler by dishroom the ground beef is stored above whole muscle meats and ham.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: no visible thermometer in meat drawers under grill at Sizzles
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation: special diets cooler by beverage counter was 46.7deg today. Internal thermometer agreed.

Observation: several cutting boards in large kitchen by rice cookers should be resurfaced or replaced

Observation: can opener was not clean to sight during today's inspection and should be wiped down after each use to prevent cross contamination.
- Raw fruits and vegetables washed before cutting, combining with other ingredients, cooked, served, or offered for human consumption in a ready to eat form
Observation: oranges used in the juicer and apples offered in ready to eat form should be washed before consumption
- In-use utensils, between-use storage
Observation: tongs in ready to eat foods offered for self service should be monitored so handling part is not in food. Muffins and cut fruit had utensil handles in today.
