    Observation: Raw shell eggs were stored above ready to eat food. Eggs were moved at time of inspection.

    Observation: Walk in cooler racks have become soiled.

    Observation: Walk in cooler door gasket has a tear by the latch.

    Observation: Clean dishes were drying on cloth towels being used to absorb moisture.

    Observation: Food observed stored directly on the floor in the walk in cooler and by the back door. Food was moved at time of inspection.

    Observation: Employee was preparing food without hair restrained.
  • Certified Food Protection Manager with management and supervisory responsibility employed by the establishment
    Observation: Facility does not have a CFPM on staff. Given the info for a local class today.

    Observation:Remove shipping paper from top section of Continential cooler.
  • equipment food contact surfaces and utensils clean to sight and touch.
    Observation:Ice machine has some buildup on side wall and ice making mechanism, clean and sanitize all surfaces, must be done monthly or more frequently if buildup occurs.
  • Sanitization methods - hot water, chemical
    Observation:Dishmachine has no sanitizer detected today, plans to have it removed, but if plans to continue to use , must have serviced to deliver 50 ppm chlorine.
  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation:Continential cooler holding milk(personal supply) at 45 degrees F, adjust to hold at 41 degrees or less.
  • Cleanability of floors, walls, and ceilings
    Observation:1)Has one floor tile on step to walkin cooler that is broken, replace to make smooth cleanable surface. 2)Back wall area of walk in cooler has one area of torn flooring, repair to make smooth and cleanable surface. 3)Seal with at least two coats of light colored paint or varnish the wooden supports of the cashiers station.

    Clean sides of fryer and side of cooler next to fryer. Clean to prevent heavy grease build-up and hazardous conditions.

    Astericks are by all food. New menus are being created that will identify only to cooked-to-order foods (ex. eggs, steak, burgers). Will be finished by the new year.

    Grease build-up on hood vents. Clean more frequently.
  • Plumbing system repaired according to law
    Mop sink handle leak when on. Facility using water line valves to prevent leaking. Must repair faucet to ensure working properly. Plan to repair over Christmas break.
