- Drying mops
Observation: Hang mop to dry between use.
- Equipment location, installation, repair, and adjustment
Observation: Rear storage shelf is less than six inches off the floor preventing cleaning underneath. Adjust lowest shelf to be six inches off of floor to allow for cleaning underneath.
- Food employees hair is effectively restrained
Observation: Employee shall wear hair restraints such as a hairnet, hat, or visor.
- Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
Observation: Outsides of equipment require a more thorough cleaning.
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Observation: Cut tomatoes in reach-in refrigerator were not date-marked as to when prepped.
- Duties of PIC
Observation: Employee at inspection confirmed that she had her child behind service counter. I reviewed unnecessary persons may not be in prep and ware washing areas.
- Using a handwashing sink- operation and maintenance
Observation: Front service counter handsink access blocked by sanitizer pail at inspection. Sink shall be kept accessible at all times.
- Cleanability of floors, walls, and ceilings
Observation: Floor requires a more thorough cleaning in hard to reach areas and under large rear storage shelf.

Observation: Update employee health reporting policy to include all employees and maintain a copy on premises. Forms 1a, 1b from Food Code may be used as a template.
