Observation: Warewashing Equipment, Determining Chemical Sanitizer Concentration 4-501.116- Quaternary sanitizer solution in the 3rd basin of the 3 compartment sink is not tested with Quaternary sanitizer test papers, chlorine test papers were used instead.
- Equipment and utensils are adequately rinsed after washing
Observation:Equipment and utensils adequately rinsed after washing-Establishment was washing dishes and immediately placing the dishes in the sanitizer solution without rinsing the dishes. Practice was changed during the inspection to included the rinsing procedure.
- Cleaning procedure
Observation:Food handler's hands were still wet after washing hands and briefly drying them with a paper towel before they put on their food service gloves. FDA Food Code 2-301.12(5) Handwashing Procedures: "Immediately follow the cleaning procedure with thorough drying using a method as specified under § 6-301.12".
- Food storage containers identified with common name of food
Observation:Unlabeled ingredient dispensing containers on the prep line. 3-302.12 Food Storage Containers, Identified with Common Name of Food: Except for containers holding FOOD that can be readily and unmistakably recognized such as dry pasta, working containers holding FOOD or FOOD ingredients that are removed from their original packages for use in the FOOD ESTABLISHMENT, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be identified with the common name of the FOOD.
- Posting of a valid license
Observation:License is posted behind the service area where the license can be seen but not reasonably read by the public.
- Storage and maintenance of wet and dry wiping cloths
Observation:Dirty single use clothes stored in contact with cleaning chemical bottles when not in use.
