Observation: Sanitizer buckets were all testing at 200ppm. Sanitizer packets state 5 quarts of water per packet for 100ppm available chlorine. Directions stated tested at 200ppm for 3 separate test kits. Establishment is going to adjust amount of packet used in sanitizer buckets. Corrected on site.
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation: Pina Colada sauce temped at 58*F internal temp. Sauce was discarded and more ice was added to holding container. Corrected on site.

Observation: Plastic containers above 3 compartment sink were stacked while still wet.

Observation: Observed employee plating lettuce with bare hands. Lettuce was discarded and employee was educated on proper practices. Corrected on site.

Observation: Handsink at bar near glass rinse splashes onto clean glassware.

Observation: 1) Container of croutons near salad prep cooler was uncovered. 2) Garnishes at bar were uncovered during non busy hours.

- Sanitizers
Observation:Has sanitizer in wiping buckets at 200 ppm chlorine, must dilute to 100 ppm per manuf. recommendation, potato prep area and bar. Encourage staff to check with test strips frequently to ensure is at proper concentration. Correcting on site.
- Outer openings are protected
Observation:Back door has gaps where light showing thru at edges, has new weatherstripping ready for usage when winter weather permits application. Seal so no light is visible around edges.

Observation:Salt shaker by potato station needs label to identify contents.

Observation:Bartenders practice is to handle garnishes with bare hands, must use barrier method or utensil to handle drink garnishes. Corrected on site, now has tongs at garnish station.

Three breading flours in unlabeled working containers on cart today, must label with common name to prevent confusion. Corrected on site.

Two cases of frozen food on floor in walk in freezer, moved to shelving now. All foods must be stored at least 6 inches off floor.
- Material characteristics of non-food contact surfaces
Victory cooler has shipping paper on, new equipment recently. Must remove shipping paper to aid cleaning, corrected on site.
- Hand and arm jewelry prohibition
Several staff have wrist jewelry on, when working with foods must remove wrist jewelry to aid cleaning wrist and forearm area and prevent contamination of product.
- In-use utensils, between-use storage
Has ice scoop handle touching ice in wait station and bar area, must keep scoop handle inverted out of product to protect ice. Corrected now.
