Observation: Several chicken plastic container lids were damaged and shall be replaced.
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation: One bucket of chicken was 64 degrees in the walk in cooler unit. The unit was discarded.
- A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
Observation: The facility does not have a thin probed thermometer on site.
- Ventilation hood system and filters designed to be cleanable, prevent dripping, and are adequate to prevent grease or condensation from collecting on walls and ceilings
Observation: The vent screens were not clean to sight in the walk in cooler unit.

Observation: Single use containers were not being stored in protection.

Observation: Several pieces of utensils were not clean to sight throughout the facility. The units were placed into the sink prior to me leaving.

Observation: The facility does not have a written procedure for cleaning up vomit and diarrhea.

Observation: The can shelf was not clean.

Observation: Single use containers were exceeding the cup dispenser limit.
- Protecting food from environmental contamination
Observation: There was not a splash guard between the hand sink and the food containers. The rice scoop handle was laying into the rice. The sanitizer buckets were setting on the floor.
- Frozen PHF/TCS foods are properly slacked and thawed
Observation: Chicken in the walk in was setting in water that was 35-65 degree water. If thawing chicken running 70 degree water can be used as long as the water is running over the product for no longer than 2 hours.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: The cole slaw fridge has a thermometer that is damaged and no longer readable.
