A can of dented applesauce was observed during inspection. A dent on the seam could allow for contamination of the food. Discarded during inspection. CORRECTED.
- Sanitization of food contact surfaces - before use and after cleaning
Dish machine inse cycle was temped at 135.7 degrees. For hot water sanitization the rinse cycle must reach a plate temp of 160 degrees. Establishment switched to foam plate ware, set up a sanitizing tank on 3 tank sink, and service was called.
