Observation: Garbage can and bag used to store brown sugar.
- Handwashing sink equipped to provide water at a temperature of at least 100° F through a mixing valve or combination faucet.
Observation: Hand sink at the just for you station did not get hot at time of inspection. Hand sink near dishmachine was unplugged because the fan was plugged in.
- Duties of PIC
Observation: Cooling logs of leftover product were reviewed at time of inspection. Initial temperatures were taken but documentation doesn't support that food was cooled to 41 degrees in the correct amount of time.
- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation: Sanitizer concentration in red bucket read 150ppm when tested.

- Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours
Observation: Cooling of leftover hot foods - taco meat and lasagna could not be verified through cooling logs.
- PHF/TCS food that is cooked and cooled on premises is reheated within 2 hours to 165°F or above for 15 seconds for hot holding
Observation: Reheating of leftover chicken nuggets to 155 - not 165 as stated by personnel. Items were corrected on site.
- Handwashing sink equipped to provide water at a temperature of at least 100° F through a mixing valve or combination faucet.
Observation: Hand sink near slider line and two in dish are do not have hot water. Previous inspection said sinks were not working - they have running water - but code says they need hot and cold running water.
