Observation: Floor/wall juncture, curbing and perimeter in dairy cooler had debris, chewed gum, and spilled product. Wall behind and adjacent to dish machine has brown buildup and is not clean to sight or touch.
- PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
Observation: Areas of rotisserie chicken that are near the face of the hot holding unit below 135. Chickens were rotated and unit was turned up at time of inspection. Hot holding temperatures will be monitored.
