How about Texas Toast and I am not talking about the Texas Toast that you see in the frozen section of your grocery store that they use to make garlic bread. You need a bread that with stand a lot of ingredients. Sourdough is good too.
Open face, grilled cheese ? Sourdough Bread, smear some mayo, huge slice/slices of tomato, top with cheddar cheese. Broil until cheese starts to melt !

Dave's Killer Epic Everything. I haven't tried it yet, but it looks interesting. His breads are sturdy so a loaded sandwich won't overwhelm it. I've made a sharp cheddar grilled cheese with raisin bread.
Toasted seeded rye. My favorite hot sandwich: toasted rye with muenster cheese, bacon, and tomatoes.
