What’s an event center? A catering hall for weddings? Or a convention center for comic con or car shows?

Yeah, that's the most important distinction to get any reasonable answer.

OP many of us in the business world knows someone involved in event centers from corporate events, to social events to trade shows, etc. So, if you could explain what you mean by "event center", that probably will open up answers to your question.

How would you differentiate this business from hotels w/ banquet/conference space and established F&B and AV offerings?

Depends on the type of event center. There are so many options! Are you referring to an empty space people can rent for parties or a FEC (family event center) like Chuck E Cheeses?

It can be a good option, but I agree with everyone here - depends on many specific factors. But I definitely think it's worth researching further.
