At callback inspection observed 5 bus tubs dated of cooked French fries dated 8/25/14 with an internal temperature range of 42-44°. At callback inspection observed 7 bus tubs of cooked French fries dated 8/26/14 with an internal temperature range of 49-54°.

At callback inspection, observed 16 bus tubs of cooked French fries that are covered while cooling. Also took at temperature of cooling cooked French fries in the kitchen at 13:30 that had an internal temperature of 110°-112°. These French fries were immediately covered and placed stacked into the walk-in cooler. At 14:15, observed an internal temperature of 108°-110°. This also demonstrates an improper rate of cooling when the temperature has only dropped 2 degrees in 45 minutes.
