However Manager stated that all items were placed in cooler less than here hours ago.observed no time marked on cheese, cut tomatoes and cut lettuce temperature of the items are between 48°F and 54°F Cut tomatoes found in 45°f in reach in cooler without any time marking. Advised manager to follow up with time as public health control and mark tomatoes with 4 hours time frame in reach in cooler in kitchen line. Cut asiago cheese was marked with 7 hours time frame marked as must be discarded at 4pm. Advised manager to follow up with time as a public health control paper work and mark cut asiago with 4 hours time frame must be discarded at 1pm. Cut lettuce found in 40°f and do not need to be placed under time as public health control form
