  • Basic - Grease accumulated under cooking equipment. Observed under cookline in kitchen whee fryers are located. Also observed grease accumulated around the wheels of the cooking equipment.
  • Basic - Wall soiled with accumulated food debris. Observed at wall behind trash can in corner of kitchen in between spice shelf and hot hold box.
  • High Priority - Cheese/milk/creamer/other dairy products cold held at greater than 41 degrees Fahrenheit. Observed sliced American cheese in use on counter at service line at 58°. Employee stated it is out during peak service hours and he returns it to the cooler as needed and that at time of inspection, cheese had only been out about 30 minutes.

Observed the following meats at hot service counter below 135°F: smoked sausage 121°, sausage patty 126°, fried chicken patty 125°. Temperatures quoted were the highest temperature reached from several samples.
