  • Basic - Employee with no hair restraint while engaging in food preparation. No restraint on male employee who seemed to be in charge.
  • Basic - Hood moderately soiled with accumulated grease.
  • Basic - In-use wet wiping cloth/towel used under cutting board.
  • High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Corn starch mixture on cookline holding at 80°. Advised rapid chill to 41 or colder and hold cold or make mixture each time it is needed.
