Observed the following cold hold temperatures in reach in cooler where time/date mark printer is located: spring mix 53°F, shredded lettuce 50°, sliced tomatoes 50°, small prepared salad bowl 50° (prepared in the morning) and large salad bowl 49° (prepared in the morning). Observed mcDonalds non-TCS sliced american cheese in unit at 50°. Observed ambient air thermometer in unit at 53°F. Temperatures were observed at 1:15pm. Inspector advised establishment to keep cooler closed as much as possible and temperatures were rechecked at about 2:20pm. Observed ambient air temperature on cooler thermometer at about 55°F and all food items increased to the following: spring mix 56°F, shredded lettuce 52°, sliced tomatoes 53°, large salads 57°, 52°, 52°, small salad 52° and non-TCS McDonalds American cheese at 51°. Management stated all items were prepared in the morning and inspector advised establishment to move potentially hazardous foods and monitor unit holding temperatures.
