Shredded cheese in walk in cooler temped 44°f, product was not in the process of preparation or cooling. Operator stated product had been in cooler overnight. Product was temped with establishments thermometer and inspectors thermometer after proper calibration with ice water. Cooler was barely holding temperature. Operator called refrigeration company and adjusted the temperature of the cooler himself. Inspector check the temperature of the cheese twice, at two different times. After the door was closed.
