  • Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed open Mountain Dew soda can on prep table where observed employees portioning and prepping food.
  • Basic - Evidence of employee eating in a food preparation or other restricted area. Observed aluminum foil with BBQ rib tips located next to soda can on prep table. Observed jar of BBQ sauce which is not sold at establishment next to ribs. During inspection, observed food being prepped and portioned on table in question.
  • Basic - Plumbing system in disrepair. Observed handwash sink near front counter in disrepair with water supply shut off completely. Observed pipes disconnected and broken beneath sink. Observed 2 other handwash sinks available for use in kitchen area.
  • High Priority - Employee rubbed hands together for less than 10-15 seconds while washing hands. Observed employee engage in handwash before refilling cheese at the pizza make line and total handwash process was less than 10 seconds. Total process should take about 20 seconds with 10-15 seconds being scrub time.
  • High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed pizza sauce on counter in kitchen area with temperature of 55°F and manager stated it had been out since about 10am. Observed temperature at about 11:20am. Manager stated that the sauce is received in a bulk bag and water is added. Advised establishment that the sauce must be kept at 41°F or below.
