Violations:
Correct response to questions No DC certified food protection manager on duty. No one could answer basic food safety questions to demonstrate knowledge. Manager arrived two hours after inspection began with DC CFPM ID.
Food-contact surfaces: cleaned & sanitized Mold is growing inside a reach-in refrigerator in standing water. The seals and interiors of reach-ins have food debris. Deli slicer has built up food debris. The ice maker has heavy mineralization.
Proper cold holding temperatures Multiple cold food items out of temperature. Establishment is double panning cold items resulting in inadequate temperature. Also, chipotle mayo, sliced tomatoes, and lettuce held without temperature control.
Toxic substances properly identified, stored, used Rinse Aid" attached to chemical sanitizer line of three compartment sink. "Rinse Aid" is not a chemical sanitizer.
