- 4-302.14 - --The kitchen lady is unable to locate her quaternary ammonia test strips this morning. She said she does have them, because she used them just last week, but they are not where she normally keeps them and she's not sure where they were moved to. She said there are spare ones in main kitchen that she can bring over.
- KDA_3_30611 - --At the serving line there are open, exposed bowls of sugar and brown sugar for the oatmeal. These bowls are not behind a sneeze guard or covered in any way. COS - spoke with kitchen lady about her options for having it behind the sneeze guard. There is also a portable sneeze guard stored in the kitchen that can be set up for protection.
- KDA_7_10211 - --There is a tub labeled "Dirty" in the dirty dishes area. The kitchen lady put soap and water in this tub for silverware to be put into. Corrected on Site (COS) - she labeled the tub "Soap Water" upon request.
- KDA_Defacto - --Hobart Cooler: Chopped Lettuce - 38.2 F, Milk Cooler: Milk - 47.9 F (Note - the kitchen lady said that milk had been delivered this morning and the milk man had the cooler open during that, plus the cooler has been open for breakfast serving time - approximately 45 minutes in total. The cooler was just shut again in the past five minutes to cool back down) --Kitchen lady said that they rarely need to keep left overs, but if they do, the food is returned to the main kitchen hot and cooled there. --Steam Table: Oatmeal - 166.2 F --The quaternary ammonia dispenser is not working this morning. The kitchen lady started to convert to using bleach (made a bucket 50ppm), then the custodian was able to get the dispenser working again. It is now dispensing 200ppm quaternary ammonia. --There is a dishwasher in the kitchen, but it is no longer used at all. They have changed to a satellite school as of this year and all prep and ware washing is done in the main school kitchen. They rinse the dishes here, but then return them to the main school to be run through the dishwasher.
