Observation: 1)Provide caulking behind three compartment. 2)Holes in wall behind hand sin and three compartment sink. Must repair to ensure surface is smooth, easily cleanable and prevent pests from entry into facility. REPEAT VIOLATION

Observation: Can opener not clean to touch. Must clean more frequently to prevent contamination.

Observation: Chlorine sanitizer sprayer were tested lower than 10ppm. Chlorine concentration must be maintained between 50 to 100ppm. Remade. Corrected at time of inspection.

Observation: No handwashing sign at front hand sink. Every hand sink to be sued by employee must has sign posted reminding employees to wash their hand.

Observation: Vents are dusty. Must clean off dust buildup on vents in walk-in cooler.

Observation: Didn't provide thermometer in reach-in fridge. Must have thermometer in all cold hold unit to monitor temperature.

Observation: A box of hot dogs was not date marked in reach-in fridge. Must date mark all potentially hazardous foods if not used within 24hrs after opened or preparation. Have 7 days from date marked to use or discard. MUST PUT DATE MARK SIGN ON FRIDGE DOOR. REPEAT VIOLATION

Observation: The thermometer in walk-in cooler read 40*F. the actual temp was 33*F. The thermometer must be accurate to +/-2*F in the intended range of use. Replace.

Observation: Small cup being used as scoop in salted peanuts. Must use utensil with handle stored outside of food and keep inverted to prevent contamination. Corrected at time of inspection.

Observation: Shake tops must hold under running water. Facility has a dipping well to install, can't find a good spot within small service area. Must make decision soon and install dipping well. REPEAT VIOLATION

Observation: Have chlorine test strips, but do not have color chart. Must provide chlorine concentration color chart for checking solution.
