Observation: Observed some food in coolers that was past shelf life (sauces, meats, milk, liquid eggs, etc.).
- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation: Lab 192 sanitizer was tested very high (>500ppm).

- Material characteristics of non-food contact surfaces
Observed towels used to absorb moisture from kitchen utensils. May not use towels to absorb moisture because it is not a smooth, easily cleanable, and non absorbent surface. Must replace with material that meets all above requirements.

The presence of insects rodents, and other pests are controlled as required
