Kitchen appears clean. Discussed following with owner: discarding gravy after service unless able to properly cool according to information provided
Critical: Cooling* (corrected on site) Observation: Gravy noted not being adequately cooled to prevent the growth of harmful bacteria.
Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. Owner no longer plans to keep any gravy left over from breakfast.

Kitchen appears clean. New handsink has been installed in kitchen (soap and towels will be relocated closer to sink). O-220F thermometer has been obtained. Microchlorine test kit has been obtained. The reuse of single-service containers has been discontinued. Gravy is discarded at the end of each breakfast. Discussed providing an air gap for drainpipe associated with handsink/3-compartment sink. No violation noted during this evaluation.
