Chlorine sanitizer solution measures at an acceptable concentration. The hand sink is properly maintained. Food contact equipment appears clean. The violations were quickly corrected by the staff.

    Observation: Food handlers are handling ready-to-eat (RTE) food (toast) with their bare hands.
    Correction: Use barriers (such as gloves, utensils or deli paper) to prevent bare hand contact with RTE food to prevent contamination from hands.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: One container of gazpacho (made 2 days ago) and potato salad (made 4 days ago) are not date marked for disposition.
    Correction: All ready-to-eat (RTE) potentially hazardous foods (PHF) must be dated when opened or made if the food is kept more than 24 hours. Food must be used or discarded in 7 days (counting the day prepared as Day 1) or less. Store the food at 41°F or below and serve or discard by the "consume by" date. Some harmful bacteria continue to grow even at refrigeration temperatures: limiting the amount of time in storage limits bacterial growth.

    Observation: Roulade is marked with a make date of "8/11." Today is day 10
    Correction: the food should have been discarded 3 days ago.
08/20/2015Routine
The facility is nearly renovated. A dish machine and ice machine will be installed later. Cold holding equipment is operating acceptably. Air gaps and backflow preventers are provided as required. Bathrooms and hand sinks are supplied properly. Coving is installed in food preparation areas.
The following work is needed to meet VDH Regulations:
(1) Exposed wood must be sealed (or painted): kitchen utility sink and other locations.
(2) Several areas around pipes or around equipment edges must be filled so they are smooth and easily cleanable, with no gaps: hole in kitchen ceiling, sinks, and others (as pointed out during the inspection).
A Follow-up Inspection is tentatively scheduled for Monday, May 11 at 9:30 AM. Please contact me earlier is the items above have not been completed yet.
We reviewed the VDH Employee Health Guidance document.
