No violations observed! Person in charge knowledgeable about food safety and answered questions correctly. Proper date marking of ready to eat foods. Very clean and organized kitchen. Ensure that employees are utilizing sanitizer test strips when setting up three compartment sink. Dishmachine just broke and service call already been placed. Please call the Health Department once it has been repaired.

  • Equipment and Utensils - Durability
    Observation: There was a wooden knife rack in the kitchen.
    Correction: We do not allow wooden knife racks in food establishments. They are not cleanable, down in the "slots"of the knife rack. Use a magnetic strip or an easily cleanable steel knife rack, or an easily cleanable bowl, or storage box. This violation was immediately corrected by the establishhment.

  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: The diced tomatoes were "out of temperature" on top of the cold food prep bar in the kitchen. The diced tomatoes were at 48 F.
    Correction: When a potentially hazardous food, such as diced tomatoes, goes out of temperature, that is above 41 F, it is critical to know exactly when that food went out of temperature. Potentially hazardous foods must be eaten, or discarded, within 4 hours of going out of temperature, or there is a risk of foodborne illness. The diced tomatoes need to stored in more shallow storage containers, if stored on top of the cold food prep bar, or could be store submerged in ice, to maintain proper temperature at all times. The diced tomatoes were immediately discarded by the establishment management, at our request. This corrected the violation.
