Advised CFM if he wants to use time as a control to submit a written plan to the EHS for approval before use. Health permit to be issued upon receipt of payment.

Time as a control discussed with food worker. If time as a control is used then a written plan will need to be provided to the inspector for approval. Prep unit still is not working properly. Payment for health permit has not been received for 2016.

If the food is held at 41°F or below the food shall be served, sold or discarded within 7 calendar days or within 4 calendar days if held at 45°F. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
