Note: Since using time as a public health control, the temperature of the cheeseburgers is not a violation. Just make sure after finishing service of potentially hazardous foods, you do not keep any left over food but dispose of it.

    Correction: Handle, display, or dispense single-service and single-use articles so the food- or lip-contact surface are protected from contamination.
  • Plumbing System Maintained in Good Repair (repeated violation)
    Observation: Observed water pooling against outside the floor of the walk-in refrigerator that can create a breeding area for pests and create a slip hazard.
    Correction: Need to turn the condensate lines down into the drain so the condensation goes down the drain instead of pooling around the walk-in refrigerator.
  • Handwashing Signage/Handwashing Facilities (repeated violation)
    Observation: A sign or poster that notifies food employees to wash their hands is not provided at the service line handsinks and the handsinks at the dishwashing machine area used by food employees
    Correction: Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees.
  • Lighting, Intensity (repeated violation)
    Observation: Less than 10 foot candles of light was noted in the walk-in refrigerator and the walk-in freezer. Also, there were boxes stored on a top shelf in the walk-in freezer blocking the available light.
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning. Need to install additional lights in both walk-in units or replace light bulbs with higher wattage bulbs not to exceed the manufacturer's specifications. Need to move the boxes of food to another shelf to prevent blocking the available light.
