Food items were delivered from Reinhart Food Service.The delivery and inspection of food items was viewed. The delivery truck trailer was clean and free of liquid or debris.The food cartons were clean,intact and free of frost. The manager counted, inspected and shot temperatures of each carton. The cartons were then viewed being properly placed in cold storage in walk-in cooler.

Staff was viewed using proper methods of hand washing and glove wear during lunch service. Discussed ice build up in Hobart freezer with manager.
  • Food Storage - Prohibited Areas (corrected on site)
    Observation: Food storage under lines on which water has condensed. Boxed packages of beef patties are exposed to dripping water/ice under condensor in walk-in freezer.
    Correction: Relocate food storage to an approved area or shield the lines to intercept potential drips.

Prior item marked 34-1190 has been repaired. Discussed repair of Hobart walk in freezer to eliminate ice build up. Leftover foods in coolers are all properly labeled and dated for re-use.
  • Physical Facilities in Good Repair
    Observation: Larkin cooling unit in Hobart walk-in freezer appears to be leaking onto items stored in freezer. A large build up of ice is beginning to form as a result.
    Correction: Have maintenance personel repair leaking unit. Remove any stored items from underneath cooling unit until it is repaired. Poor repair and maintenance compromises the functionality of the physical facilities.

Leftover food items were viewed being pulled from serve line into shallow pans for rapid cooling and cold storage. Discussed thermometer need for Vulcan cooler. Thawing raw ground beef rolls were viewed properly placed on lowest shelves of walk in cooler.
  • Temperature Measuring Devices - Ambient Air and Water
    Observation: The ambient (air/water) temperature measuring device (degrees F) located in the Vulcan walk in cooler is not accurate.
    Correction: Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.

Discussed with the manager the plans for the Delfield cooler which is out of order. Staff was observed serving lunch with proper glove usage and hand washing. Thawing hamburger rolls were observed properly stored in walk-in cooler. Staff was observed using proper method of wash/rinse/sanitizing at 3 compartment sink.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: The 2-door Delfield cooler is out of order.
    Correction: Have the cooler repaired or have it removed from kitchen if there are no plans for use.

Person in charge made the appropriate steps when discovering the nonfunctioning refrigeration units. These must be repaired or replaced within 30 days.
Good handwashing and glove use observed. Good job washing hands after handling the dirty trays and before handling the clean trays. The location of the hand sink is not convenient for the worker in the dishroom.
A handsink should be installed in the dishroom. This would decrease the likely hood of an employee handling dirty trays and then handling clean trays without washing hands in-between.
Discussed cooling of any leftovers and determined their may be a tray of lasagna left after lunch is served. Discussed ways of cooling and the temperature goals. 135 to 71 in 2 hours and to 41 in 4 hours.

  • Equipment - Good Repair and Proper Adjustment
    Observation: Two refrigeration units are not functioning properly. The person in charge has taken steps to replace them.
    Correction: The refrigeration units must be repaired or replaced within 30 days to better meet cold holding demand of the facility.

Hands must be washed between handling dirty trays and handling clean trays. Due to the door to the wash room having to be kept closed to comply with fire code, the hand sink in the kitchen is no longer easily accessible for the person working in the dish room.
A hand sink is necessary in the dish room, to assure hands do not contaminate clean trays.
Remember to set up the three compartment sink as wash, rinse, sanitize

    Observation: A food employee failed to wash his or her hands before handling clean trays after handling dirty trays.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

Public water supply is currently under boil notice. Water fountains are currently shut down. Water was observed being boiled for table cleaning. Bottled water is supplied in large quantities for student/faculty use. Disposable utensils/dinnerware to be used for food service during duration of boil notice. Proper food handling/ glove wear practiced for lunch preparation. Hamburger rolls were observed thawing in proper location of Delfield Cooler.

    Observation: Hobart Cooler in kitchen was out of order. It is unable to hold adequate temperature. Food items had been previously discarded.
    Correction: Repair the cooler to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the cooler, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: Ceiling in mopsink room is not maintained in good repair. The ceiling will leak on occasion of hard rain.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Observed milk delivery and storage from supplier. Milk crates and cartons appeared to be clear of dust,dirt and debris, as was delivery truck. Each milk crate was checked for temperature as it was pulled off truck. Temperatures ranged from 38 to 34 degrees F.
