Discussed with the manager the plans for the Delfield cooler which is out of order. Staff was observed serving lunch with proper glove usage and hand washing. Thawing hamburger rolls were observed properly stored in walk-in cooler. Staff was observed using proper method of wash/rinse/sanitizing at 3 compartment sink.

Person in charge made the appropriate steps when discovering the nonfunctioning refrigeration units. These must be repaired or replaced within 30 days. Good handwashing and glove use observed. Good job washing hands after handling the dirty trays and before handling the clean trays. The location of the hand sink is not convenient for the worker in the dishroom. A handsink should be installed in the dishroom. This would decrease the likely hood of an employee handling dirty trays and then handling clean trays without washing hands in-between. Discussed cooling of any leftovers and determined their may be a tray of lasagna left after lunch is served. Discussed ways of cooling and the temperature goals. 135 to 71 in 2 hours and to 41 in 4 hours.

Hands must be washed between handling dirty trays and handling clean trays. Due to the door to the wash room having to be kept closed to comply with fire code, the hand sink in the kitchen is no longer easily accessible for the person working in the dish room. A hand sink is necessary in the dish room, to assure hands do not contaminate clean trays. Remember to set up the three compartment sink as wash, rinse, sanitize

Bottled water is supplied in large quantities for student/faculty use. Disposable utensils/dinnerware to be used for food service during duration of boil notice.
