Staff was viewed with proper practices of hand washing and glove wear. Cooking beans were measured by staff using thin stemmed probed thermometer. Thawing hamburger rolls were in proper location,(lowest shelf) of Victory cooler for thawing.

Lasagna prepared today. The meat was cooked this morning then the the lasagna was prepared and reheated. Time in the temperature danger zone during prep and waiting to be placed in the oven for reheating was kept to a minimum.
Discussed turkey prepared for the Thanksgiving meal. It is precooked and pre-sliced, no prep ahead of time.

Good monitoring of temperatures. When not in use leave the thermometer on a clean surface instead of putting it into its box, which may contaminate the probe. Remember to wash, rinse, and sanitizer the thermometer probe before use and any time it may be contaminated.

Discussed and corrected sanitizer wiping solution with manager. Proper hand washing and glove wear observed during lunch service.
  • Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing* (corrected on site)
    Observation: When tested, no sanitizer or a low concentration of chemical sanitizer was found in the sanitize basin. Chlorine sanitizer was at a concentration of 10 PPM.
    Correction: Provide chlorine at proper concentration of 150-200 PPM and immerse or expose food contact surfaces to sanitizing solution for adequate time.

Discussed noted issues with manager to have maintenance staff correct. Especially the repeat violation 54-2860 with the wall covering at walk-in cooler. Staff was viewed using proper glove wear and hand washing during lunch service. Chlorine sanitizing solution was measured at 200 PPM.

    Observation: Portable air conditioner unit and vent system in the stockroom and dishwashing room noted in need of cleaning.

    Observation: Vent filters in the hood system are not being maintained in a clean condition. Heavy buildup of grease and dust is evident on hood over grill/stove.

    Observation: The wash temperature of the high temperature sanitizing ware wash machine is not meeting the manufacturer's specifications in a timely manner during normal periods of washing. Long periods of re-charge time are needed to let machine reach mimimum washing temperature.
    Correction: Contact service company in order to adjust/repair machine.
