I made stuffed tomatoes yesterday. Stuffed them with quinoa, onions, peppers, and mushrooms. Came out very good.

I made some last week. I like using wild rice mixed with a little of white rice. Also, I have an abundance of squash and zucchini. I shredded some patty pan squash and added that to the mix.

I make vegetarian stuffed peppers with orzo and tomato paste. Then I vary the spices and additional vegetables with what's around.

Dawn, I wish I saw his sooner! I have SO many! I tend to change the recipe just a bit, every time. Pre heat oven to 350.


My very basic and EASY recipe involves - 1 lb Ground meatless

8 sweet bell peppers

one diced bell pepper

one clove minced garlic.

one lb. diced mushrooms

4 green onions m

1/2 cup carrots minced

1 cup brown rice (or white, wild or quinoa) Use frozen for a very easy meal.


Jar of your favorite high quality jarred tomato sauce.


Cuman, turmeric, a dash of nutmeg, chopped flat leaf parsley

1. Sautee minced vegetables in evoo or your favorite vegetable oil.

2. Sautee ground meatless. Add spices.

3. combine with rice.

4. Set aside.

5. lightly boil peppers until fork tender.

6. Remove seeds and insides.

7.Cover casserole with tomato sauce.

8. fill with peppers - stuff.

9. Top with more tomato sauce.

10. Bake until bubbly.

variations - top with shredded cheese for the last ten minutes, instead of ground meatless, use lentils, use half ground meatless and lentils, swap out the ground meatless for Quorn or Gardien chicken substitute - use poultry seasoning and a cream sauce. Add paprika for Hungarian stuffed pepper.

Enjoy!

If you're one of those people who always has a pot of lentil soup on the stove, you can just strain the solids out and use them to stuff the peppers with. That'll be lentils, celery and carrots, some onions and garlic and spices. Perfect compliment for the peppers. Drink the liquid part of the soup separately.

Does anyone have an easy recipe using stuffing?

My garden has gone crazy with peppers so I want to stuff and freeze them.

Great recipe! Thanks ! (can't repu you - don't know why) I wish I had seen this before I baked the stuffed-peppers bought from Costco.

One of my beast dishes forever. I made it two times but didn't get the proper taste. After that when I follow your article really I have got a new flavor, that really impressed to me. Especially thanks to introducing this authentic dish with us
