Been dieting for 2 weeks and the scale hasn’t changed?

49 female and want to lose at least 40 lbs. I’m eating 1000 calories or less. Low carb. I walk or ride my bike (I’ve always exercises though). I feel less bloated and clothes feel slightly better but no change on the scale. I haven’t changed my exercise so no gaining muscle. I do have hypothyroidism and take 150 mcg of Levothyroxine a day but last I checked (checking again soon) there were in range.
Today I was almost a lb more than I was last week. The strange thing is was when I was eating crap and tons of calories I didn’t gain any weight. It’s like I’m stuck at the same weight regardless (fluctuating 5 lbs maybe). I need to lose weight though due to type 2 diabetes. I can tell the difference right away in diabetes symptoms. Not thirsty anymore. (Have to force to drink water the last few weeks) Not getting up 4 times a night to pee.
Mostly have coffee with half and half in the morning and maybe 2 small turkey sausages. Then I will snack on small things. A piece of string cheese, a small handful of peanuts or Keto granola. A piece of deli turkey.
For dinner I will have a salad. Sometimes from a restaurant or my own. Or I’ll have grilled chicken.
It sounds like you're seeing results from your change in diet--less bloating, clothes fitting better, less thirst, etc, which have benefits in their own right. Continue eating a healthy, balanced diet, don't starve yourself, and know you're on the right track regardless of what the scale says.
