I'm hoping that some entrepreneurial restuaranteur sees this and considers opening a restaurant in our area. I'm not talking about a Pho shop, or just adding a Banhmi sandwich to a menu, but real Indo-French cuisine.

We've got about 8 Thai places in the area, and they all seem to be surviving just fine, so there should be plenty of room for a new category of restaurant.

I'm jonesing for vermicelli noodles and egg rolls.

Agreed, area is oversaturated with Thai and Mexican restaurants. Where in the Prescott area or PV would be an specific location? You have to remember, high traffic areas are probably key. Glassford Hill Rd and Florentine Rd in PV is a good spot. Prescott Lakes Pkwy just north of US Bank in the In N Out parking lot is another ideal location. There's an empty lot there close to Walmart.

If there's only one, I'd put it in a central location, like near the mall.

But if there's only one, folks would be willing to drive to get there. I live in Prescott and it takes me at least 20-25 minutes to get to Toi's or Olivas and I drive there happily.

No idea why it's so difficult or slow to get new types of restaurants in the area are that lacking. Is it demographics, entrepreneurs overlooking the area, or risk adverse? There's only so many burger and sandwich shops that can open here. Quad city mayor's should offer tax incentives or artificially stimulate the local economy.

Eurasia in downtown Prescott (where Chi's Cuisine used to be) has an interesting mix of asian entrees plus a few european options that are unique for this area, but no vietnamese. They have a once a month themed buffet evening. I just went to the Indian food one and it was very affordable compared to Taj Mahal, if not quite as good.

The restaurant business is highly volatile and with the economy and inflation currently running rampant, unless you have deep pockets and high demand the restauranter's are going to think twice about starting up a new business these days.

There were plenty of good Vietnamese restaurants in the Phoenix area (at least back in the 90’s while I was living there). Surely, if you want it that bad, a two hour drive shouldn’t be a deterrent.
