  • Observed light shield in the walk in cooler is in distepair.
  • Critical. No currently certified food service manager on duty with four or more employees engaged in food preparation, observed 6 employees on duty at time of inspection -manager stated he has a card but it is at home in his wallet.
  • Critical. Person in charge failed to insure employees are properly sanitizing equipment. Inspector questioned manager why food employee would rinse food equipment in the recessed floor mop sink, he stated the equipment didn't touch the floor and didn't instruct employee to use 3 bay sink to properly ware wash equipment until inspevtor prompted him to do so.
