NOTE: The establishment caught on fire approximately 2 weeks ago. The fire seemed to be contained to the inner offices and locker area on the first floor. Clean-up is ongoing and no smoke damage reached the food storage and meat processing areas. Although the scent from the fire remains, I only detected it in the inner office and locker room areas. Documents either burned or were removed from the offices after the fired. The saved documents were placed in boxes and some have been taken offsite until renovation is complete. During the inspection, workers were cleaning equipment and meat processing areas. According to the person in charge, all food processing is conducted at night while only and cleaning, delivery, and shipping occurs during the day.
The establishment's HACCP plan for non intact meats was reviewed.
