Critical: FOOD CONTACT SURFACES - WAREWASHING CHEMICAL SANITIZATION EXPOSURE TIME Observation: No chlorine dispensed from the dish machine. Based on inspection of the dispensing tubes, the tubes likely need replacement to prevent backflow of the sanitizer and other chemicals back down the supply tubes.
Correction: Replace the tubes. In the interim, dump one capful of bleach in the dish machine "knockout" when the plunger goes down the second time and when the rinse agent is dispensed. This should provide enough chlorine to sanitize the dishes. Test the sanitizer while dumping the bleach into the machine. If the concentration is not correct (50 ppm) then fill the clean compartment of the three compartment sink with bleach at 100 ppm and sanitize the dishes from the washer until the machine is repaired.
