SURFACE CHARACTERISTICS - INDOOR AREAS Observation: The older floor surfaces and walls are starting to wear. Commercial grade surfaces such as fiberglass board and commercial vinyl sheet or tile are acceptable.
Correction: Planning for surface work should begin. Walls, floors and ceilings shall be smooth, durable and easily cleanable. If located in areas subject to moisture they shall also be non-absorbent.

FOOD TEMPERATURE MEASURING DEVICES - PROVIDED (repeated violation) Observation: No thermometer is present for monitoring cold temperatures in foods.
Correction: Provide thermometers that are easily accessible and capable of taking temperatures in cold food. 41 F is the cold hold temperature. Be certain the thermometer can measure to 41 F .
EQUIPMENT AND UTENSILS - NONFOOD CONTACT SURFACES - DESIGNED Observation: The pizza cabinet unit bottom shelf is coming apart. Provide cleanable shelving.
Correction: Provide equipment that is designed and constructed to be easily cleanable and free from unnecessary ledges, projections and crevices.
NON-FOOD CONTACT SURFACES - CLEAN Observation: General cleaning needed at kitchen equipment and shelving.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
FLOORS, WALLS AND CEILINGS - CLEANABILITY Observation: There was some freeze-up along the north wall in the kitchen. The wall and floor area is scheduled for rework this spring.
Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable.
