    Correction: On menu, provide asterisk adjacent to items that can be served in a raw or undercooked condition.
  • EQUIPMENT AND UTENSILS - FOOD CONTACT SURFACES, CLEANABILITY (repeated violation)
    Observation: Paint/enamel on areas of meat slicer is chipping and have potential to get in sliced food items.
    Correction: Provide food contact surfaces that are smooth, and are free from breaks and cracks. Repair or discard.
  • THERMOMETERS - FOOD - ACCURACY (repeated violation)
    Observation: Thermometers (2) used in food establishment is not accurate to +/- 2°F. Thermometers are off from 9 to 30 F. Was not able to calibrate either thermometer during inspection.
    Correction: Replace thermometers.

    Observation: Thermometer in walkin cooler and pepsi cooler measuring ambient air are not accurate to ± 2°F.

    Observation: 1-2 day old lasagne is cold held at 43°F. Lasagne was voluntarily discarded.
    Correction: Maintain cold potentially hazardous foods at or below 41°F
  • Critical: PLUMBING - BACKFLOW PREVENTION - AIR GAP (corrected on site)
    Observation: Insufficient air gap provided on waitress station ice bin. Corrected during inspection.
    Correction: Provide an air gap on water supply side to protect water supply.
  • Critical: TOXIC SUBSTANCES - STORAGE (corrected on site)
    Observation: A can of lubricant and paint are currently stored over handwash paper toweling in basement. Lubricant and paint were moved to a location away from single use, equipment and food during inspection.
    Correction: Rearrange area so that toxic materials are stored below or away from food, equipment and single service items.
