    Observation: There are ready-to-eat condiments stored under raw shelled eggs in the walk-in cooler.
    Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination. Eggs were moved during the inspection.
  • CERTIFIED FOOD MANAGER – REQUIREMENT
    Observation: There is no Wisconsin Certified Food Manager for this establishment.
    Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within 30 days. Correct By: 20-Nov-2015
  • LABELING - FOOD STORAGE CONTAINERS LABELED WITH COMMON NAME
    Observation: Sugar and flour were observed stored in unlabeled container.
    Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient. Correct By: 23-Oct-2015
  • FOOD CONTAMINATION PREVENTED - MISCELLANEOUS CONTAMINATION
    Observation: Ther walk in cooler containers food bags with spots of debri and mold on them and a spill wiht debri and mold was observed on the floor under the racking unit near the door.
    Correction: Change methods and clean the area to protect foods from contamination. Correct By: 30-Oct-2015
  • KITCHENWARE AND TABLEWARE - HANDLED TO PREVENT CONTAMINATION
    Observation: It was observed that eating utensils are stored or displayed near the 4 compartment sink where the food or lip contact surface could be contaminated.
    Correction: Store utensils in a manner to avoid contamination to the food and lip contact surface. Correct By: 23-Oct-2015
