Critical: RTE/PHF-TCS PROPER DATE MARKING Observation: Date marking is generally OK, however, tarter sauce is not dated. Discussion with Don and Mack regarding other sauces/dressings and the requirements.
Correction: Adjust method or procedures so that tarter sauce and other items as discussed are properly dated as to when they were made or when the commercial container was opened. Items shall not exceed 7 days past their date mark. Correct By: 26-May-2015

Correction: Provide training to employees on proper use and concentration of sanitizer. Quat sanitizer shall be used at 200 ppm. Discussed possible use of pump dispensers for sanitizer and use of test strips to monitor.
