    Observation: Vacuum sealed tuna is being thawed in its package. Package directions state that tuna shall be thawed immediately prior to cooking. Employee cut open tuna packages during the inspection. Discussed that same process shall be used for vacuum sealed salmon.

    Observation: Hot pads on ovens throughout kitchen noted in need of cleaning.
