PROPER COOLING METHODS - CRITERIA (corrected on site) Observation: Sliced tomatoes in the bain and in the walk-in cooler, which were sliced earlier today, were observed at 50-52F.
Correction: During the inspection, the tomatoes were placed on a cookie sheet to rapidly cool. After 15 minutes, the temperature of the tomatoes dropped 2-3 degrees. Adjust methods or procedures to facilitate cooling as described in 3-501.15. Ensure that foods prepared from ambient temperatures, such as sliced tomatoes or tuna salad, are cooled to 41F within 4 hours. Correct By: 17-Dec-2015
