  • Critical: PREVENTING CONTAMINATION FROM HANDS - NO BARE HAND CONTACT WITH RTE-FOODS
    Observation: Employee observed handling deli turkey and buns with bare hands.
    (CORRECTED DURING INSPECTION) Cook immediately adjusted practices with proper gloving to handle ready-to-eat food items. Discussed how these items do not reach a kill-step when they are on the grill.

    Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.
  • Critical: REHEATING FOR HOT HOLDING
    Observation: Buffet taco meat was improperly reheated. Taco meat was taken from the cooler and placed in the warmer to heat and for patrons to self-serve.
    (CORRECTED DURING INSPECTION) Cook took the meat back to the kitchen to reheat to 165 and then returned it to the warming unit.

    Correction: Adjust procedures and methods to properly reheat food.
  • Critical: FOOD CONTACT SURFACES - SANITIZED BEFORE USE AFTER CLEANING
    Observation: The prep table is not sanitized after cleaning. Currently a wet rag is used to wipe down the surface and is not soaked in a sanitizer solution, or the surface is not sprayed with a sanitizer solution and wiped with a dry rag.
    (CORRECTED DURING INSPECTION) Employee provided and will use a Clorox disinfectant spray and a dry towel. She is also going to set up a sanitizer bucket with 100ppm bleach and soak the wiping cloth in it between uses.

    Correction: Clean and sanitize all utensils and equipment before contact with food.
  • WHERE TO WASH - UNAPPROVED SINK (corrected on site)
    Observation: Food employee observed washing hands in the food prep sink.
    (CORRECTED DURING INSPECTION) since a separate hand wash sink is not available in the kitchen, employees shall use the wash sink as a hand wash sink. Employee immediately adjusted and continued to us the wash sink for hand washing.

    Correction: Food employees shall wash their hands in a handsink approved for handwashing.

    Observation: No consumer advisory provided.
    Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition. Consumer advisory fact sheet will be provided with the inspection report.

    Observation: No thermometer is present for monitoring temperatures in foods.
    Correction: Provide thermometers that are easily accessible and capable of taking temperatures in food.

    Observation: Wiping cloth used for wiping counters stored on the prep table.
    Correction: Cloths used for wiping counters shall be stored in a sanitizing solution.

    Observation: Walk-in cooler is not equipped with an integral or permanently affixed temperature measuring device.
    Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.
  • NON-FOOD CONTACT SURFACES - CLEAN
    Observation: Non-food contact surfaces of the tracks of the double sliding door True cooler and the 3-door freezer non-visible portion of the handles are soiled with encrusted food and residue.
    Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
  • LIGHT BULBS - PROTECTIVE SHIELDING
    Observation: Lights located in the dry storage area by the upright True 3-door freezer and the to go container storage areas are not shatter resistant.
    Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs.

    Observation: No handwashing signage provided in the employee restroom or public restroom handwashing sinks.
    Correction: Provide handwashing signage at all handwashing sinks used by food employees.
