    Observation: Roast beef (46), lasagna (48.5), sliced ham (48.5) in lower Delfield prep cooler and olives (51) in upper Delfield prep cooler are cold held over 41°F.
    Correction: Maintain cold potentially hazardous foods at or below 41°F. Move all food to a different cooler and repair/replace prep cooler.

    Observation: Items in the small prep cooler is cold held at 44°F.
    Correction: Maintain cold potentially hazardous foods at or below 41°F.
    Cooler was adjusted while onsite and ambient air temperature was at 41-42F before I left facility.
  • Critical: FOOD CONTACT SURFACES - MECHANICAL WAREWASHING HOT WATER EXPOSURE TIME
    Observation: Hot water temperature in dish machine is only reaching 125F after a number of cycles.
    Correction: Adjust exposure time to hot water sanitization rinse so utensils reach a minimum surface temperature of 160°F. Until hot water sanitization is met, manually sanitize dishes in the 3 compartment sink.
    Reinhart was called for service while I was onsite.
  • HANDWASHING SIGNAGE
    Observation: No handwashing signage provided at handwashing sink.
    Correction: Provide handwashing signage at all handwashing sinks used by food employees.
