Critical: RTE/PHF-TCS PROPER DATE MARKING (corrected on site) Observation: Barbecue beef, cod fish, prime rib slices and cole slaw in walk in cooler is not date marked. Items are fresh as observed and were dated prior to end of inspection. Cod fish are still thawing for tomorrow's fish fry - ok.

Critical: FOOD CONTACT SURFACES - FREQUENCY (corrected on site) Observation: Meat slicer in walk-in cooler used with potentially hazardous food not cleaned after 4-hours. Operator removed meat slicer from walk-in cooler, disassembled slicer and ran all parts through dishwasher and cleaned and sanitized the remainder of the macnhine and blade in place prior to end of inspection.
