Critical: PHF/TCS, HOT HOLDING Observation: (CORRECTED AT INSPECTION)Hot dogs in upper layer of hot holding container at 122 F.
Hot dogs on bottom layer at 135 F. Unit on lowest setting.
Correction: Maintain hot potentially hazardous foods at or above 135°F. Machine was adjusted at inspection. Use metal-stem thermometer to check the temperature of the product in the hot holding unit.
PERSON IN CHARGE - DUTIES Observation: All staff must be aware of safe food handling.
Correction: The person in charge shall review hot holding temperatures and covered beverage requirements with all staff.
OPEN DRINK CONTAINER (corrected on site) Observation: Drinking cup without cover was observed by hot dog sandwich preparation area.
Correction: Provide approved beverage container in food preparation area.
