Critical: RTE/PHF-TCS PROPER DATE MARKING Observation: Chili (in upright cooler) that was taken out of the freezer was not dated. Ready-to-eat potentially hazardous foods must be marked with a date if held for more than 24 hours. There was also a pot of some potentially hazardous food in the walk-in downstairs that was not marked with a date.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
USING A HANDWASHING SINK - ACCESSIBLE Observation: Handwashing sink had a mop in it at the beginning of the inspection and the mop bucket was also in front of the hand wash sink. The hand wash sink was unavailable for proper handwashing.
Correction: Keep handwashing sink free of obstructions and in working condition at all times to allow for frequent handwashing.
LABELING - FOOD STORAGE CONTAINERS LABELED WITH COMMON NAME Observation: Chili and pot in basement both were not labled with contents. Please label all items with common name of food.
Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient.
