Observation: Barbeque and beans in walk-in cooler are not date marked. Sliced ham in refrigerator is not date marked. Several items in freezers (ie-spaghetti sauce, bean & bacon soup) are not date marked.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
- HANDWASHING FACILITIES - LOCATION AND PLACEMENT
Observation: Handwashing sink in kitchen has dirty dishes in it and is not providing easy access to food employees.
Correction: Do not put dirty dishes in handwashing sink to facilitate handwashing by food employees.
- LABELING - FOOD STORAGE CONTAINERS LABELED WITH COMMON NAME (repeated violation)
Observation: Flour and some other items are being stored in unlabeled containers by the kitchen stove.
Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient.
- IN-USE UTENSILS, BETWEEN USE STORAGE (repeated violation)
Observation: Ice scoop in bar was laying down in ice.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
- WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER
Observation: Wiping cloth used for wiping counters are laying on counter and are not in a sanitizing solution.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution.
- THAWING
Observation: Hamburger patties are being improperly thawed on kitchen counter..
Correction: Adjust procedures or methods to properly thaw foods.
- NON-FOOD CONTACT SURFACES - CLEAN
Observation: The suppression system in the kitchen needs to be cleaned.
The walls in the Walk-in cooler have mold accumulation on them and need to be cleaned.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
