Discussed that bare hand contact shall be avoided with foods that will no longer be cooked. Violation corrected during inspection.

Critical: PHF/TCS, COLD HOLDING Observation: Turkey and roasted veggies in reach-in cooler is cold held above 41°F. It was determined that the stock of cheese was blocking the air from properly circulating in the reach-in cooler. The cheese was moved to allow for proper circulation. Violation corrected during inspection.
Correction: Maintain cold potentially hazardous foods at or below 41°F
WHERE TO WASH - PRE-WASH / PRE-SCRAPE SINK Observation: Unapproved pre-wash or pre-scrape sink being used by food employees for handwashing. This is a repeat violation for the 3rd year.
Correction: Prohibit handwashing in pre-wash/pre-scrape sink.
OPEN DRINK CONTAINER Observation: Employee beverages noted uncovered on the prep tables. Keep employee beverages covered and keep on the lowest shelf where it cannot contaminate food and clean equipment.
